Recipe Box – Pot Luck Lazy Cabbage Rolls

Carrie and I LOVE Lazy Cabbage Rolls. I’ll make this recipe, and that’s what we’ll eat for the week – seriously. It stores really well in the fridge, and it’s even good cold, if the ground beef used is very lean, or it’s pre-cooked and drained before adding to the casserole.
(This missed posting yesterday for some reason, so here it is today!)

28 of 52 Weeks – A Wish for the Future…

I’ve had a lot of wishes over the years. Some as simple as “I wish I would stop stubbing my toe every five minutes” to as complicated as “I wish I could build a time machine and go back four hundred years and tell my families to stay in England/Ireland/Scotland and wait if I had a time machine, why would I tell them anything, I’d just stay put and blend in but hang on a second what about electricity and the internet and who would feed the menagerie and…”

I’ve been given a lot of cards and poetry, a lot of sympathies and hugs, a lot of nods and shared tears over the past couple of weeks. It’s been harder on other folks, I think, than myself or my family.

I’m trying to get things back into line after being away so much of May and June. It’s going to take a while, and I appreciate the private comments and emails folks have sent. It means a lot to me that I had the opportunity to spend as much time as I did with my mom at the end, and now through the grieving process – more for what could have been than what was – it’s nice to know I’ve got people I can sound things off of…
