29 November 2013 No Comment

I’m not sure I’ll be waiting until the end of the month for this one… I LOVE this, love it love it love it!

Hopefully you will to!

Crock-Pot Sweet & Spicy Pork Shoulder

1/2 c low-sodium soy sauce
1/2 c brown sugar
1 to 2 tbsps chili-garlic sauce (this is HOT so use discretion)
1 tbsp fresh ginger, grated
1 tsp Chinese five-spice (optional)
salt and pepper to taste
2 1/2 pounds pork shoulder, cut into 2-inch pieces (trim fat)
1 c long-grain white rice
1 medium head bok choy, thinly sliced (about 8 cups)
2 green onions, sliced

In a 5-quart slow cooker, combine soy sauce, brown sugar, chili-garlic sauce, ginger, five-spice powder, salt and pepper. Add the pork and stir to make sure it’s all coated. Cook, covered, on low for 8 hours.

About fifteen to twenty minutes before serving, cook the rice according to the package directions.

While the rice cooks, skim off any fat from the pork. Gently fold the bok choy into the pork and cook, covered, until heated through, 2 to 4 minutes.

Serve with the rice, sprinkled with green onions.

By the end of the day you should have completed at least 48343 to stay on track. And if you’ve made it this far, the rest is a breeze!

Best of luck!
