I&#8217;m remedying some of this today by posting some recipes here and at Sacred Triskele. Tomorrow, I&#8217;ll try for the 52Weeks posts. <|;-)\n\nSo yummy, so fast, so good for ya!\n\n<strong>Citrus Chicken Skewers<\/strong><\/p>\n<p><em>Ingredients:<\/em><br \/>\n3 tbsp Worcestershire Sauce<br \/>\n1 tbsp dark or honey mustard<br \/>\n1 juice of one grapefruit, orange or tangerine<br \/>\n1 tsp grated rind<\/p>\n<p>4 boneless, skinless chicken breasts, cubed<br \/>\n1 red onion<br \/>\n1 red pepper<br \/>\n1 green pepper<br \/>\n1 pineapple<br \/>\nlg. white button mushrooms, optional<\/p>\n<p><em>Directions:<\/em><br \/>\nCombine marinade ingredients in the morning, mix well and pour over chicken. Marinate throughout the day, in refrigerator.<\/p>\n<p>Just before dinner time, soak the skewers in water for at least 20-30 minutes while you prepare the veggies. Alternate chicken cubes, onions, peppers, mushrooms and pineapple on skewers. Grill or low-broil (turning once for each side) until chicken juices run clear.<\/p>\n<p>This recipe doesn&#8217;t really need a side dish, but it can be served with (yes, you guessed it) Basmati rice.<br \/>\n<center><\/p>\n<hr \/>\n<p><\/center><br \/>\n<a href=\"http:\/\/jodilee.sacredtriskele.net\/wp-content\/uploads\/2012\/01\/kitchen.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/jodilee.sacredtriskele.net\/wp-content\/uploads\/2012\/01\/kitchen-150x150.jpg\" alt=\"\" title=\"kitchen\" width=\"150\" height=\"150\" class=\"alignright size-thumbnail wp-image-1810\" \/><\/a>Returning readers know we have an abundance of honey. I used up almost three full containers of liquid honey for Yule and Christmas presents, and we still have another two or three left in the box. This is after we&#8217;d given away I don&#8217;t know how many containers when Care first brought them home from work.<\/p>\n<p>She&#8217;s been hired back for this season, so there&#8217;ll be more honey! I love her boss. I think she&#8217;s going to want to work there forever&#8230; and she&#8217;s so good with the bees. Just like a good little beecharmer should be. <|;-)\n\nIn the meantime, we're eating honey. Honey mustard, honey dill, honey glaze, honey bbq... you get the picture. If you don't want something heavy like rice as a side for the skewers, you could try this:\n\n<strong>Honey Mustard Greens<\/strong><\/p>\n<p>I use pre-packaged salad greens (mixed baby greens when we can get &#8217;em, Italian at other times).<\/p>\n<p><em>Dressing:<\/em><br \/>\n1\/2 cup low-fat plain yogurt<br \/>\n1 1\/2 tbsp light mayonnaise<br \/>\n2 tsp honey<br \/>\n2 1\/2 tsp dark mustard<br \/>\n1 1\/2 tbsp lemon juice<br \/>\n1 green onion, minced<\/p>\n<p><em>Directions:<\/em><br \/>\nWash the salad greens, and shake or spin dry. <\/p>\n<p>Whisk all dressing ingredients together, and toss into salad.<\/p>\n<p>Simple, right? <\/p>\n","protected":false},"excerpt":{"rendered":"<p>I&#8217;ve been so busy the last while that I&#8217;ve: missed my weekly posts, fell back on some bad meal choices and completely missed two weeks of blog-reading (sorry folks!)
