Okay, I’m a few days early, but nonetheless, Happy Mabon!<\/p>\n

The Creating New Pagan Family Traditions chapbook for Mabon went through the publishing process yesterday, and is now available on Smashwords<\/a>, Amazon Kindle<\/a> and at Etsy<\/a>.

Mabon, also known as Alban Elfed, Harvest Home, and Second Harvest, is celebrated at the Autumnal Equinox which generally falls between the 21st and 23rd of September.<\/p>\n

The autumnal equinox is the time of pagan thanksgiving, and we celebrate it in a similar manner. We give thanks for the wealth of the harvest, for the summer past, and ask boons for the winter ahead. <\/p><\/blockquote>\n

Zucchini Chocolate Chip Cookies<\/em><\/strong><\/p>\n

Ingredients<\/em>
\n1 c unsalted butter, softened
\n1 c granulated sugar
\n1 c brown sugar
\n2 eggs
\n2 tsps vanilla
\n2 c all-purpose flour
\n2 c whole wheat flour
\n2 tsps baking soda
\n2 tsps ground cinnamon
\npinch nutmeg
\n1\/2 tsp cocoa
\n1 tsp salt
\n2 c peeled and grated zucchini
\n1-1\/2 c semi-sweet chocolate chips<\/p>\n

Instructions<\/em>
\nHeat oven to 350 degrees F.<\/p>\n

In a large bowl beat together the butter, and sugars on medium speed until pale and fluffy, about 3 minutes. Add the eggs one by one until completely blended, and mix in the the vanilla.<\/p>\n

In a medium bowl, sift together the remaining dry ingredients, and add to the blended mixture and beat on low just until blended. Do not overmix. The batter will be stiff.<\/p>\n

Add the zucchini and chocolate chips. Spoon the cookies in approximately 2 tbsp-size scoops, about 2 inches apart, onto an ungreased non-stick cookie sheet. <\/p>\n

Bake for 10 \u2013 12 minutes, until the cookies are light golden brown around the edges. Remove from oven, let sit on baking sheet for 5 minutes, then cool on a wire rack.
