We give thanks for the wealth of the harvest, for the summer past, and ask boons for the winter ahead. <\/p><\/blockquote>\n<p>&nbsp;<\/p>\n<p>\nWould you like a wee sample?<\/p>\n<p><strong><em>Zucchini Chocolate Chip Cookies<\/em><\/strong><\/p>\n<p><em>Ingredients<\/em><br \/>\n1 c unsalted butter, softened<br \/>\n1 c granulated sugar<br \/>\n1 c brown sugar<br \/>\n2 eggs<br \/>\n2 tsps vanilla<br \/>\n2 c all-purpose flour<br \/>\n2 c whole wheat flour<br \/>\n2 tsps baking soda<br \/>\n2 tsps ground cinnamon<br \/>\npinch nutmeg<br \/>\n1\/2 tsp cocoa<br \/>\n1 tsp salt<br \/>\n2 c peeled and grated zucchini<br \/>\n1-1\/2 c semi-sweet chocolate chips<\/p>\n<p><em>Instructions<\/em><br \/>\nHeat oven to 350 degrees F.<\/p>\n<p>In a large bowl beat together the butter, and sugars on medium speed until pale and fluffy, about 3 minutes. Add the eggs one by one until completely blended, and mix in the the vanilla.<\/p>\n<p>In a medium bowl, sift together the remaining dry ingredients, and add to the blended mixture and beat on low just until blended. Do not overmix. The batter will be stiff.<\/p>\n<p>Add the zucchini and chocolate chips. Spoon the cookies in approximately 2 tbsp-size scoops, about 2 inches apart, onto an ungreased non-stick cookie sheet. <\/p>\n<p>Bake for 10 \u2013 12 minutes, until the cookies are light golden brown around the edges.
