Quick Chicken & Greens
I’ve been so busy the last while that I’ve: missed my weekly posts, fell back on some bad meal choices and completely missed two weeks of blog-reading (sorry folks!) I’m remedying some of this today by posting some recipes here and at Sacred Triskele. Tomorrow, I’ll try for the 52Weeks posts. <|;-) So yummy, so fast, so good for ya! Citrus Chicken Skewers
Ingredients:
3 tbsp Worcestershire Sauce
1 tbsp dark or honey mustard
1 juice of one grapefruit, orange or tangerine
1 tsp grated rind
4 boneless, skinless chicken breasts, cubed
1 red onion
1 red pepper
1 green pepper
1 pineapple
lg. white button mushrooms, optional
Directions:
Combine marinade ingredients in the morning, mix well and pour over chicken. Marinate throughout the day, in refrigerator.
Just before dinner time, soak the skewers in water for at least 20-30 minutes while you prepare the veggies. Alternate chicken cubes, onions, peppers, mushrooms and pineapple on skewers. Grill or low-broil (turning once for each side) until chicken juices run clear.
This recipe doesn’t really need a side dish, but it can be served with (yes, you guessed it) Basmati rice.
Returning readers know we have an abundance of honey. I used up almost three full containers of liquid honey for Yule and Christmas presents, and we still have another two or three left in the box. This is after we’d given away I don’t know how many containers when Care first brought them home from work.
She’s been hired back for this season, so there’ll be more honey! I love her boss. I think she’s going to want to work there forever… and she’s so good with the bees. Just like a good little beecharmer should be. <|;-) In the meantime, we're eating honey. Honey mustard, honey dill, honey glaze, honey bbq... you get the picture. If you don't want something heavy like rice as a side for the skewers, you could try this: Honey Mustard Greens
I use pre-packaged salad greens (mixed baby greens when we can get ‘em, Italian at other times).
Dressing:
1/2 cup low-fat plain yogurt
1 1/2 tbsp light mayonnaise
2 tsp honey
2 1/2 tsp dark mustard
1 1/2 tbsp lemon juice
1 green onion, minced
Directions:
Wash the salad greens, and shake or spin dry.
Whisk all dressing ingredients together, and toss into salad.
Simple, right?
