NaNoMeals – Crock-Pot Soy Glazed Chicken
I’ve done this one before without the veg, but now that we can get bok choy and snow peas easily all year round, I’ll be giving it a try!
Crock-Pot Soy Glazed Chicken and Veg
1/2 c packed light brown sugar
3 tbsps low-sodium soy sauce
3 tbsps fresh lemon juice
1 tbsp grated fresh ginger
1/4 tsp crushed red pepper
1 1/2 pounds boneless, skinless chicken thighs (about 8)
1 c long-grain white rice
1 tbsp canola oil
3/4 pound snow peas, trimmed
2 heads baby bok choy, leaves separated
1 red bell pepper, sliced
4 green onions, cut into 2-inch lengths
2 cloves garlic, thinly sliced
In a 5-quart slow cooker, mix together the first five ingredients. Add the chicken, turning to coat with the mixture.
Cover and on low for 8 hours.
Approximately 15-20 minutes before serving, cook the rice according to the package directions.
While the rice cooks, remove the chicken from the slow cooker. Pour the liquid into a large pan and boil until slightly thickened.
Heat the oil in a large skillet over medium-high heat and stir-fry the snow peas, bok choy, bell pepper, onions, and garlic only until tender. Season with black pepper. Serve with the chicken and rice, with the reduced cooking liquid over all.
By the end of the day you should have completed at least 13336 to stay on track.
