NaNoMeals – Crock-Pot Italian Pot Roast
I’m not so sure about the authenticity of this one, but I’ve tried it and it’s omggood! I think it’s the wine… and frankly, at this point in NaNo, a little wine isn’t going to hurt.
Crock-Pot Italian Pot Roast
2 tbsp olive oil
1 2 1/2- to 3-pound bottom-round pot roast
2 large onions, quartered
2 celery stalks, chunked – about 2 c
2 large carrots, chunked – about 2 c
3 garlic cloves, minced
1 sm. can tomato paste
1 c dry red wine
1 c beef broth
1 c sliced mushrooms
1/2 tbsp salt
1 tsp oregano leaves (dried)
1 lg. can diced tomatoes, with the liquid
Brown the roast with the oil in a large skillet and transfer to the crock-pot.
Add the onions, celery, carrots, and garlic to the drippings in the pan. Stir frequently, cooking until tender. Add the tomato paste, stirring well, and transfer to the slow cooker. Deglaze the skillet using the wine; add the contents of the skillet to the cooker, as well as the mushrooms, salt, oregano, broth and tomatoes.
Cook 8 hours on low heat.
By the end of the day you should have completed at least 30006 to stay on track.
