Recipe Box – Sneak Peek of Freakin’ Easy Soups

My wee soup cookbook will be ready soon, and I thought why not post a couple of the veg selections?

Hearty Vegetarian

Ingredients

3 c water
3 c tomato or vegetable juice (V8)
1 tsp Worcestershire sauce (optional)
1/4 tsp chopped fresh basil
dash pepper
1/2 c chopped celery
1/2 c chopped onion
3 med. potatoes, cubed
1/2 c sliced okra
2 c frozen or fresh mixed vegetables (peas, beans, corn, carrots)
2/3 c alphabet or orzo pasta

Directions

In large saucepan, combine water, juice, Worcestershire sauce, basil and pepper. Bring to a boil, then reduce heat and simmer 15 minutes, until celery and onions are tender. Stir in the frozen vegetables, okra and pasta and cook 20-25 minutes.

Garnish with fresh parsley.

Vegetable Chowder

Ingredients

2 slices bacon, diced
1/4 c chopped onion
1 10oz can beef broth
1 14oz spaghetti sauce
1 c water
1/4 tsp basil leaves, crushed
2 c frozen or fresh mixed vegetables (peas, beans, corn, carrots)
1/2 c fusilli pasta
2 c milk
2 tbsp flour
salt and pepper to taste
grated parmesan cheese

Directions

Cook bacon until crisp in large saucepan. Remove bacon, reserving drippings. Set bacon aside, and cook onion in bacon drippings until tender. Stir in beef broth, spaghetti sauce, water and basil. Add vegetables and pasta. Bring to a boil, the reduce heat and simmer until vegetables are tender.

Combine milk and flour until smooth. Stir into chowder, bringing it to a boil and the mixture thickens. Add salt and pepper to taste, and sprinkle in bacon.

Garnish with grated parmesan cheese.
