Recipe Box – Cabbage Roll Soup

I’ve seen this one pop up a fair bit lately, mostly people sharing a pin they’ve nabbed for Pintrest, or via tweet, status, etc. Since it’s one of my favorites, I thought I’d share my recipe.

Cabbage Roll Soup – Low Sodium/Heart Healthy

Ingredients

2 lbs extra lean ground beef
2 tsp Worcestershire sauce
1 tsp black pepper
1 tsp dill weed or 2 tbsp fresh chopped
2 onions, diced
2 tsp garlic powder or 4 cloves, fresh fine diced
1 c water
8 c cabbage, chopped
1 2l can low-sodium tomato juice
2 lg. cans diced tomatoes, low-sodium preferred
2 c rice, uncooked

Directions

Brown beef with Worcestershire sauce, pepper, dill, onions and garlic. Cover with water.

Add cabbage, juice, tomatoes and rice to a soup pot, bring to a boil, then lower heat. Add meat mixture; deglaze pan with another 1/2 c water, and add to soup.

Cook on low until the cabbage is tender, and the rice is cooked through.
