Recipe Box – Crock Pot NaNo Life Savers
Crock pot meals are going to save your sanity during NaNoWriMo, and these recipes are word-worthy!
A couple of these are modified from those I posted last year, so if they look and taste familiar, that’ll be why.
Not a one of these is vegetarian friendly, but I promise I’ll find some more to post for next week that are. And soups, too!
Crock Pot Stroganoff
Ingredients
1 lb round steak (fat removed, cubed)
1 med. onion, chopped
1 tbsp hot mustard
1 tbsp Worcestershire sauce
1/2 tsp salt
1/2 tsp pepper
1/4 tsp dry dill
1/4 tsp fennel seed
8 oz sliced or quartered mushrooms (use fresh, much tastier!)
4 cloves garlic, minced
1/3 + 1 tbsp flour
1 c beef broth
1 sm package sour cream
cooked, broad egg noodles
Directions
Brown the steak before putting into the crock pot. Cover with everything up to the flour. Whisk together the flour and the broth, then add to the crock pot, and stir well. Cover and turn to high for 1 hour, then low for 6 hours, or 7 hours on low.
Remove the lid and stir in the sour cream, and let sit for fifteen minutes. Stir again, then serve over hot, buttered noodles.
Crock Pot Jambalaya
(no shrimp)
Ingredients
2 c onion, chopped
1 c celery, chopped
1 c green pepper, chopped
1 c red pepper, chopped
1 c water
1/8 tsp each – salt, garlic powder, paprika, pepper, onion powder, cayenne, dried oregano, red pepper flakes
1/2 tsp dried thyme
2 boneless, skinless chicken breasts, cubed
1/2 lb sliced smoked sausage (andouille, mild Italian, etc.)
1 large can diced tomatoes
1 tbsp diced chilies (canned)
Directions
Combine all above, and cook on low for 7 hours. Serve over hot rice.
Crock Pot Spaghetti Sauce
Ingredients
2 pounds ground pepperoni
2 lrg cans diced tomatoes
2 lrg cans Hunts Italian tomato sauce
2 cloves garlic, minced
1 sm onion
1 tsp red pepper flakes (optional)
2 tsp dried oregano
2 tsp dried basil
salt, pepper and garlic powder to taste
Directions
Mix all ingredients in a large slow-cooker in the morning, set to low. Leave it cook until you start the pasta. Uncover, and turn off the heat. Serve with pasta and garlic toast. Yes, we love the garlic!
Crock-Pot Chili
Ingredients
2 pounds extra-lean ground beef
2 medium onion, chopped
2 sticks celery, chopped
1 green pepper, chopped
1 red pepper, chopped
2 garlic cloves, minced
3 tbsp chili powder
1 tbsp ground cumin
1/2 tsp salt
2 lg. can diced Chili-Style tomatoes (w/liquid)
1 c Guinness or other dark ale
1 jalapeno chili, halved and seeded, finely chopped
2 cans Chili-Style beans, (w/liquid)
Directions
Put the meat, onions and garlic into the crock-pot, adding the other ingredients and stirring well. Cover, and cook on low for 7 hours.
(I love this served over basmati rice!)
