Recipe Box – Crock Pot NaNo Pt. 3
We’re nearly half-way through the insanity of NaNoWrimo, and on Saturday, it’ll be time to give yourself a wee break, and a treat. Try one (or all) of these yummy desserts!
Crock Pot Pumpkin Pudding
Ingredients
1 15 oz can pumpkin
1 1/2 c evaporated milk
3/4 c brown sugar
1/2 c Bisquick or similar mix
2 eggs, beaten
2 tbsp melted butter
2-1/2 teaspoons pumpkin pie spice OR
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1/4 tsp cloves
2 tsp vanilla extract
Directions
Combine all ingredients in a large bowl, then transfer to a crock pot well coated with cooking spray.
Cover and cook on low for 6 hours. Serve warm with ice cream or whipped topping.
Crock Pot Rice Pudding
Ingredients
3/4 c long grain rice
2 c milk
1 c heavy cream
1 egg
3/4 c dark brown sugar
2 tbsp butter
1 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp kosher salt
Directions
Mix all ingredients in a well sprayed crock pot, and cook on low for 5 hours. You may want to stir once or twice during the cooking time to keep the cinnamon mixed in. Dried fruit such as raisins, cranberries, etc. can be added during the cooking process, but fresh fruit should be left until served.
Crock Pot Gooey Brownies
Ingredients
3/4 c melted butter
1 1/2 c sugar
3/4 c unsweetened cocoa
1/3 c flour
3 lg eggs, beaten
1 tsp vanilla extract
pinch kosher salt
3/4 c semi-sweet chocolate chips
Directions
Line the crock pot with foil and spray well with cooking spray, or spray with cooking spray and then line with parchment paper.
Combine all but the chocolate chips, mixing well. Fold in the chips, and pour into the crock pot. Cover and cook on low for 3 to 3 1/2 hours. Serve with ice cream!
