Recipe Box – For Christmas Morning

Here are two of my favorite Christmas (or any special morning) breakfasts!

Christmas Morning Breakfast

Ingredients

16 slices thick-cut bread, remove crusts
8-12 slices of ham or back bacon (aka Canadian bacon)
8 Kraft Sharp Cheddar Cheese slices (Grilled Cheese version works best!)
6 large eggs
1/2 tsp ground black pepper
1 tsp dry mustard
2 tsp Worcestershire sauce
3 c milk
1 tsp crushed red pepper flakes
1/4 c green onion, chopped
1/2 c butter, melted
1 c corn flakes cereal

Directions

Spray a 9×13 baking pan. Layer 8 slices of the bread in the pan, then ham, then cheese slices. Layer the remaining bread on top.

In a large mixing bowl, beat 6 eggs. Add milk and seasonings and stir. Pour over the layers in the pan, then sprinkle the red pepper flakes and chopped green onion over all. Cover and refrigerate over night.

Christmas morning, remove from fridge and uncover; crush 1 cup of corn flakes and sprinkle over the casserole, the pour melted butter over all.

Bake at 350* for 50-60 minutes, then let stand for ten minutes before serving.

Hash Brown Casserole

Ingredients

8 bacon slices, cooked & crumbled
1 c chopped onion
1 tsp minced garlic
1 lg bag frozen hashbrowns
1 c shredded sharp (Old) chedder cheese
3/4 c green onion, chopped
1/2 c sour cream
1/2 tsp salt
1/4 tsp pepper
1 can cream of mushroom soup

Directions

In the pan you cooked the bacon in (and after you’ve drained the grease) brown the onion and garlic, stirring often. Add the hashbrowns, stir well and cook covered for 12 minutes; stir occasionally.

Combine bacon, half the cheese, green onion, soup, sour cream and seasonings in a bowl. Add cooked hashbrowns, onions and garlic, giving it a good stir. Spray a 9×13 baking pan, and pour the mixture into it. Sprinkle with remaining cheese, cover with foil and refrigerate overnight.

Christmas morning, remove from fridge and let stand for 20 minutes while the oven pre-heats to 350*. Bake for 30 minutes, uncover, and bake another 20 or so minutes or until cheese begins to turn golden.

Serve with scrambled eggs and hot beverages of choice!
