Recipe Box – Hey Chicken!
I spied a few recipes on Pintrest this past week while I was searching for something to do with chicken. We had a club pack of chicken breasts that didn’t get packaged and frozen on time, so I cooked them all up instead, and froze them that way. But what to do with them now?
Stuffed Chicken on the Grill
Ingredients
2 – 4 oz. precooked boneless chicken breasts
2 roasted red peppers, in strips
2-4 bacon strips
6 baby spinach leaves
3 tbsp homemade Ricotta, or 2 ounces Mozzarella in strips
1 tsp olive oil
2 tbsp Italian salad dressing
Directions
Preheat grill to medium. Cut the chicken breasts horizontally in half – almost all the way through, but not quite. Place 2 spinach leaves on your workspace, with the 3rd on top. Add 1 1/2 tablespoon of Ricotta or 1 ounce of Mozzarella on the leaves, at the bottom. Roll the cheese in the leaves, then stuff inside the chicken breast. Wrap the breast in 1-2 slices of bacon, tucking the end. Repeat with second breast.
Place the breasts on the grill, and cook for 4-5 minutes on each side. You just need to make sure it’s heated through, and the bacon is cooked.
Serve whole or sliced.

Slow Cooker Chicken Fajitas
Ingredients
4 boneless precooked chicken breasts
1 lg can diced tomatoes
1 tbsp chopped green chilies
1 red, orange and green bell pepper, sliced lengthwise into strips
1 large yellow onion, cut in half and sliced
1 tbsp minced garlic
2 tsp chili powder
1 1/2 tsp ground cumin
1/2 tsp paprika
pinch salt
pinch pepper
1 tbsp lime juice
1/2 tbsp honey
Serving Ingredients
Corn or flour tortillas, sour cream, hot sauce, refried beans
Directions
Put half the can of tomatoes and the green chilies into the bottom of a crock pot. Cover with half of the peppers and onions, add half the garlic, and the chicken breasts.
Blend remaining seasons together in a separate bowl, and use half on one side of the chicken, turn, and finish off. Cover with the rest of the tomatoes, peppers and onions. Cook on high for 2 hours, or low for 4. Remove chicken and shred (like pulled pork). If there is a lot of broth in the crock, ladle some out and discard. Return the now shredded chicken. Mix the lime juice and honey together, and stir into the crock pot. Cover and cook for another half hour on low.
Serve with your favorite sides and condiments!
