Recipe Box – Cheesy Dinner
The BeeGirl and I haven’t been eating particularly healthily lately (thanks for pizza last night, RhiaChu!), and tonight isn’t going to be an exception. Thing is, it’s FREAKING cold again, and I have a half-gallon of whole milk and a pound of old cheese in the fridge.
Not to mention… two heads of cauliflower, a head of romanescu, and probably a half-head of broccoli in there as well. It could be more than Cheesy Cauliflower tonight, it could be all sorts of yummy soupy goodness!
Cauliflower Cheese Soup
Ingredients
1 lg onion, finely diced
1 stalk celery, finely diced
2 heads cauliflower, broken into florets
1/4 c butter
1/2 c dry red wine
water to cover
4 c whole milk
2 c shredded sharp cheddar cheese

Directions
Melt butter in large dutch oven or smallish soup pot. Add vegetables, and cook, stirring often, until the onion and celery have softened. Add the wine, and simmer for a few minutes.
Cover with water, and bring to a boil, just long enough to cook the cauliflower through.
Add the milk, return to near-boil, and stir in the cheddar cheese.
Garnish with croutons, and serve!
Honey Dill Grilled Ham and Cheese
Ingredients
4 Kaiser rolls
2 tbsp hot mustard
4 tbsp honey dill sauce
1/2 lb shaved ham (we use Old Fashioned Carving Ham)
4 cheese slices, or 1 c shredded sharp cheddar cheese
Directions
Cut rolls in half, spread hot mustard on each bottom half. Top with ham, honey dill sauce, and cheese.
Place under 500* broiler until cheese bubbles and melts, then remove and top with the bun. Cut in half, and serve.
