Recipe Box – Eat Your Greens!
Even with the weather still being a pain in the backside, folks around here have already fired up their grills, and declared barbecue season open!
So, to go along with those delightful burgers, steaks, ribs and chicken, here are a couple of my favorite salad sides.
Mom’s Cabbage & Apple Salad
Ingredients
1 small head of cabbage, heart removed, diced
1 granny smith apple, washed, cored & diced
1 red delicious apple, washed, cored & diced
1/2 c whipped salad dressing
pinch celery seed
salt & pepper to taste
raisins, optional
slivered almonds, optional
Directions
Prep cabbage and apples as noted, combine in a large salad bowl. Mix salad dressing with seasonings, then toss with the cabbage and apples. The salad should be relatively dry, though you can add or leave out some of the dressing if need be. Use raisins and/or almond slivers for garnish, or mix in.
Grilled Caesar Salad
Ingredients
2 med. romaine hearts, discard outer leaves
olive oil
Caesar dressing
Parmesan cheese, fresh
lemon
salt & pepper to taste
mini croutons, garnish
Directions
Pre-heat the grill to high, then lower the temperature to between low and medium. Cut the romaine in half lengthwise, and brush with olive oil. Place on the grill, cut & oiled side down. Grill for two minutes, then place on serving plate.
Cut the lemon in half, and squeeze the juice over the romaine, then drizzle with Caesar dressing. Sprinkle salt and pepper, and garnish with mini-croutons.
